Got your apples? Here is a quick and easy apple pie recipe to make with all those apples you will get:

Classic Homemade Apple Pie

Ingredients:

For the Pie Crust:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small cubes
  • 6-8 tablespoons ice water

For the Filling:

  • 6-7 medium-sized apples (a mix of tart and sweet varieties), peeled, cored, and sliced
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces

Instructions:

  1. Prepare the Pie Crust:
    • In a large bowl, whisk together the flour and salt.
    • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to work the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, mixing with a fork, until the dough comes together.
    • Divide the dough into two equal portions, shape them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Make the Filling:
    • In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
  3. Assemble the Pie:
    • Preheat your oven to 425°F (220°C).
    • Roll out one disc of chilled dough on a lightly floured surface to fit a 9-inch pie pan. Gently place the dough into the pie pan, letting any excess dough hang over the edges.
    • Spoon the apple filling into the pie crust, mounding it slightly in the center. Dot the filling with small pieces of butter.
    • Roll out the second disc of dough and place it over the apples. Trim any excess dough hanging over the edges. Crimp the edges of the pie to seal the crusts together. You can also create a decorative edge using your preferred method.
  4. Bake the Pie:
    • Place the pie on a baking sheet to catch any drips. Make a few small slits on the top crust to allow steam to escape.
    • Bake the pie in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  5. Cool and Serve:
    • Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling to set.

Slice and serve the apple pie on its own or with a scoop of vanilla ice cream for an extra treat!
